What is the bevel of a knife?

 In

The bevel or grind of a knife refers to the profile of the blade and how its ground to produce its cutting edge. Most blades will have a primary bevel and a smaller secondary bevel at the cutting edge. The bevel can go right from the edge to the spine, or a portion of the way up. It can be ground flat, or curved in a convex or concave fashion. Please refer to the 8 Most Common Knife Grinds article for more.
